Strawberry Cupcake Recipe
2 + 3/4 cup flour
1 + 3/4 cup sugar
2 t. baking powder
3/4 t. salt
1 (3 oz.) package strawberry gelatin
Mix above ingredient together in a large bowl. Then Add...
1 cup finely chopped, strawberries (include
about 2 T. strawberry jam or jelly with
3/4 cup milk
3/4 cup vegetable oil
4 large eggs
Beat for 30 seconds. Scrape down sides of bowl, then beat for 2 more minutes on medium speed. Full your cupcake liners about 3/4 full. Bake at 350 F. for about 20 to 25 minutes. They should spring back when touched lightly in the center with your finger.
Cool in pan for 5 minutes then move to wire racks and cool completely. Frost as your heart desires!
***Sorry it took me soooooo long to get this posted. I made an unexpected trip to Tennessee last weekend. My friend was graduating from high school, and originally i wasn't going to be able to go. But it worked out literally last minute that I could! I had an amazing time! I love the south....Tennessee especially! I think I'm a hillbilly at heart or something! :)
