Strawberries and Summertime!

Hey Everybody!!!!
Things have been insanely busy around the farm.  Between chopping, and STRAWBERRIES and general chores, taking care of the cows and livestock....whew!!!!!!!!!!!
Why did I have strawberries in all caps?  Well, we have this big strawberry bed.....which is finally dwindling now.  Our biggest picking was about 90 quarts!!----in one day!!! Isn't that insane???
I was almost dreaming about strawberries!
I made some strawberry jam, then a few strawberry pies!  I found a recipe for a graham cracker-walnut crust.  Pair that with a fresh strawberry pie filling.....spells YUMMMM!!!!   You can find the recipe for the crust here.   The recipe I used for the filling is about the same as anything you can find when you google "fresh strawberry pie recipe."
It's been rather hot here lately too.  Our favorite thing to do to cool off is to go for a ride in my dad's dunebuggy.  For those of you who have no clue what that is, here's a picture.

Ours isn't quite that shiny anymore, but it's the same color and looks the same.  My dad had a guy rebuild the engine this really has some "get up and go" now!  The guy that did it, builds engines for race cars....he did a street version for us.  My dad has had that dunebuggy for as long as he's been married which is over 40 years!!!!!!!

I know a lot of our neighbors are putting in pools!  I've been tempted to run next door and jump in!

Rag Quilt Recap

This rag quilt I made this spring.  It was for my best friend who lives down in Tennessee.  She's a country girl, and loves anything cowgirl and country.  This project made a little dent in my stash of scrap fabric.  It was a lot of fun to make!  The fraying of the edges wasn't too difficult either.  You keep the seams on the front of the quilt, then take a scissors and chop them about every fourth of an inch.  Then I threw it in the washer, then in the dryer, with many stops to empty the lint tray.  I love how it turned out.....better yet, my friend absolutely loved how it turned out too!  :)

The cowboy boot in the center of the quilt is an applique piece....or should I say pieces.  I got the pattern from a "Boot Bash" block of the month going on over at Molly's Place.

It was fun, and even better to see the look on my friend's face when she opened her present!

Cupcake Series (mini), Part 4: Strawberry

Strawberry Cupcake Recipe
2 + 3/4 cup flour
1 + 3/4 cup sugar
2 t. baking powder
3/4 t. salt
1 (3 oz.) package strawberry gelatin
Mix above ingredient together in a large bowl.  Then Add...
1 cup finely chopped, strawberries  (include
about 2 T. strawberry jam or jelly with
 chopped strawberries)
3/4 cup milk
3/4 cup vegetable oil
4 large eggs
Beat for 30 seconds.  Scrape down sides of bowl, then beat for 2 more minutes on medium speed.  Full your cupcake liners about 3/4 full.  Bake at 350 F. for about 20 to 25 minutes.  They should spring back when touched lightly in the center with your finger.
Cool in pan for 5 minutes then move to wire racks and cool completely.  Frost as your heart desires!

***Sorry it took me soooooo long to get this posted.  I made an unexpected trip to Tennessee last weekend.  My friend was graduating from high school, and originally i wasn't going to be able to go.  But it worked out literally last minute that I could!  I had an amazing time!  I love the south....Tennessee especially!  I think I'm a  hillbilly at heart or something!  :)
Have any of you ever went on a trip somewheres, and never wanted to come home because where you were felt more like home than home did?
