Mix in a separate bowl:
1 T. lemon juice
1 t. honey
1/4 t. green stevia powder
1/8 t. vanilla
1 T. applesauce
Let above mixture stand for a few minutes then add:
1 egg, slightly beaten
1 c. milk
Add wet ingredients to dry ingredients and mix until moistened. Batter should be somewhat lumpy.
Fry in a nonstick skillet on medium to medium-low heat. Fry on each side until light brown on the bottom and pancake starts to set.
*About this recipe: This is one of my successful experiments in the world of healthy cooking. The original recipe called for 1 Tablespoon of sugar, which I replaced with the stevia and honey. Another alteration is the oil in the original recipe was substituted for milled flax seed and applesauce.
